Bacon, Potato, and Leek Quiche

Ingredients

  • 1 refrigerated pie crust (or make your own!)

  • 4 slices of Farm at Bald Hill bacon

  • 1 shallots, diced

  • 1 large leeks, thinly sliced (white and light green part only)

  • 2 cooked red potatos, diced

  • 1 serrano pepper, diced, seeded if prefer more mild flavor

  • 2 tbsp flour

  • ½ tsp salt

  • ½ tsp baking powder

  • 4 Farm at Bald Hill eggs

  • 1.5 cups grated Gruyere cheese

Instructions

  1. Preheat the oven to 375. Press the crust into a 9 inch pie pan and pierce the bottom with holes with a fork.

  2. Bake crust for 7 minutes.

  3. Reduce heat to 350 on oven.

  4. Boil potatoes until soft, but not too soft.

  5. Dice leeks and shallots.

  6. Chop bacon.

  7. Heat medium sized skillet over medium heat. Add bacon and brown, approx 8 minutes. Add shallots, leeks, and pepper to pan.

  8. Saute for 3 minutes.

  9. Add diced potatoes and cook one more minute.

  10. Combine the flour, baking powder, and salt in a small bowl.

  11. In a large bowl beat the eggs for 4 minutes on high.

  12. Add grated cheese, veggies, and flour mixture to eggs. Stir to combine.

  13. Pour the mixture into the crust. Bake the quiche for 40-45 minutes.

  14. Remove from oven and dig in!
